Potassium Sorbate in food industry


Potassium Sorbate can effective to inhibit mold, yeast bacteria and aerobic bacterial activity, it also can prevent the growth and breeding of harmful microbial such as meat HIV Bacillus, Staphylococcus, salmonella, etc. But it is almost invalid to useful microbial like anaerobic spore bacteria, Lactobacillus Acidophilus and so on, its role of suppress growth is stronger than sterilization so as to effectively prolong the preservation time of food and keep original food flavor. Potassium Sorbate is recognized as the most safety food preservatives in various preservatives in worldwide, it is straight-chain structure of carbon hydrogen and oxygen, and it eventually breaks down into carbon dioxide and water after it enter into the body, but there is no residue in the human body. Its toxicity is 1/2 of the salt, as well as 1/40 of another widely used food preservative sodium benzoate. With the improvement of food safety awareness, potassium Sorbate are expected to gradually replace the use of sodium benzoate.

Potassium Sorbate can be directly spraying, dipping, powder spray, handling in package materials, etc. When it comes to non-ionic surface active agents and plastic, the antimicrobial activity of potassium Sorbate will be reduced. Salts of heavy metals can catalyze the oxidation reaction. Sorbic acid can react with sulfur-containing amino acids, but the reaction can be inhibited by adding vitamin c, propyl ester of Gallic acid or butylated hydroxytoluene.

This solution is very sensitive to pH when it is saved in the glass containers. Therefore, it needs to detect micro-organisms if use potassium sorbic acid as a preservative agent in store for a long amount of time.
